Grammy in Indiana’s Pistachio Dream

You may know my Grammie passed last year, but my summer memories of visiting her mom, my great grammy who I lovingly call Grammy in Indiana include this delicious dessert she used to make.   And I typically make it for our summer birthday celebration. Since me and bf are almost at our 2 year anniversary, I decided to suprise him with it tonight.

Directions:

  1. Press first three ingredients into a 13″ x 9″ pan and bake at 350 degrees for 20 minutes. Allow to cool thoroughly.  Beat Cool Whip, cream cheese and confectionery sugar with electric mixer; spread over cooled crust.  Beat pudding mix and milk well with electric mixer on low setting. Let mixture stand until set. Then carefully spread over cream cheese layer.  Normal people apparently cover and put it in fridge where it can be kept for up to 5 days.  Mine has never lasted more than an hour.
