Recipe: Mashed Sweet Potatoes

I have a new addiction-yams.   I make sweet potato fries, roasted yams, mashed sweet potatoes.  I tried a recipe and used yams as a sub for regular potatoes.  The kids ate everyhing I made.  And helped me cook.

 

Recipe:

 

4 cups diced cooked yams

 

⅓ cup Hidden Valley® The Original Ranch® Dressing Light

 

1 tablespoon fat-free milk

 

1 tablespoon light margarine (tub-style) or butter

 

¼ teaspoon salt

 

Instructions:

 

Place chopped yams into a pot and cook for about 20 minutes or until tender.

 

Add Hidden Valley® The Original Ranch® Dressing Light, milk and margarine to the yams and mix with hand mixer until the mixture reaches the consistency of mashed potatoes.

 

Add salt, mix and serve.
